I have a Nintex form (On Prem) that contains control descriptions but want those to be hidden once the form is submitted. So that when the submission is being review by the team that manages the list, they are not cluttered with the description that they do not need. Only the customer needs the description, so we only need it to show when the form is being utilized initially.

I don’t see a way to specifically change a control visibility, but I have a possible workaround for you.
Try to add a rule to change the value of the description to empty when the control has a value.
Here is an example:
Add a Form Rule:
Enter your username or e-mail address. We'll send you an e-mail with instructions to reset your password.
