Assign task -> extract userid out of (group or person sp column)

The column type for Request is person or group

Below below image is the assign task feature part of  workflow. I removed my username. 

License - Request should be what should show up in the email

When sending out the assign task email 

The title displayed says

license - i:0#.f|membership|my email@email address

I want to extract "my email" out of there. After the last | and before the @. 

Second question in the send email function the to address. TO:lookup a user. How do I use the same email from above in the request.

@neilawesome2 When selecting a person field, you should see x below this allows you to select the other options this field will return.

One of the questions is solved. I can now fill up the to box.  This question is unsolved.
I want to extract the email address from there.
i:0#f|membership|Email

In the email I want to extract the everything before the @ 
so if the email is lol@something.com -> I want to extract lol.
