How to use this action in workflows? My understanding is that this Workflow action can convert SP list data to a PDF using a defined template. Is this correct? Anybody have any pros/cons they would like to share

Yes, you create a document template (word) and insert tags into it, that refer to your list item fields or workflow variables.
The output would then be a Word, PDF, Excel etc.
It's a nice way to automate document creation based off of list data, but since your workflow can also have variables, there are other calculations that could occur, that you could put into the document also, as well as merge with other doc templates.
