I am building a system that will be deployed to 8 different Salesforce instances and includes several DocGen packages.

Is it possible to include the DocGen packages or do I have to rebuild them individually?

You definitely do not have to rebuild them.  How are you creating the 8 different Salesforce instances?  Are they sandboxes or different orgs.

Either way, you can always Migrate DocGen Packages
