Lookup column in Nintex Workflow returning more than expected

Within [Assign Flexi Task] I have a added an item to the Subject field of the "Initial Email Options". The item is a lookup field showing the requester's unit. In the SharePoint list it only shows the unit, which is what I expect. However, when the initial email is sent, it not only shows the unit, it also shows what I assume is an internal ID number within brackets. For example, a requester has chosen "Quartermaster" as their unit. When the email is sent the following shows
"Quartermaster [G3mB-5Mn9kaCOmR7iD_Shg]"
How can I just get the title? Or how can I get a substring that includes everything prior to "["?

You probably have "lazy approval" enabled on your task.

This token is the token of the lazy approval system (when you can reply to the task simply be replying  by email).

If you don't want this token, disable the "Lazy approval"
