I see that this is a current limitation for responsive forms. Does anyone know when this might be addressed/resolved by Nintex?

Just to clarify, are you using the Responsive designer or the New Responsive designer in SharePoint online?

If you are using the Responsive designer, you can set the “Default value” of a Choice control (single choice) in the settings of the control.

@bamaeric  I am using the New Responsive designer as we just joined the Nintex family. Not sure if the other designer is an other for us.
