We are converting over from Nintex for SharePoint and I see the option to configure a notification as plain text is no longer available. I have a requirement to send a few emails without html. Is there any way to do so?

if you use the Send an email action for Exchange Online you do have the option to select the message body format. You will need to connect this action to exchange online to use it though as it will send using the connected email.
