In our organisation we’ve not had an oversight of the Nintex tool for some time. I’m now trying to tidy up the system and ensure that various departments are still able to use the tool effectively.
Is there a list of tasks/functions that should be monitored to achieve that?

Your tenant should have a dashboard from where you can monitor Workflow instances and User Tasks
You will need appropriate rights, this can be done from the Settings tab at the top.
