How to Set "From" Field in Salesforce Email Delivery

I need to know if it is possible to modify the default email in the "From" field when using "Salesforce Email" delivery for a DDP. The DDP is run manually via a Saleforce page layout button.

The "From" portion of an email will leverage the user that clicked the button on the page layout or an orgizational email address that exists in your Salesforce org. Here's some more information on Org-wide emails:
