Yep, can be done, however it depends on what your purpose is.
I had a requirement to send emails using a potential reply address, so we had to assign "SEND on behalf off" permissions in AD for that specific account, this allows it to be used in Both Form Email Rules and Workflows.
Just be aware though, K2 removed the Send Email permisions as a different user, we had it re-instated, but may not be supported in a future version.

Alternatively, you can ask your Mail Server Admin to create an alias for the K2 Service account if you cannot. Replace the address in “From” of K2 Service in Environment Library and in String Table. If you want to also change the “Display name”, you will need to create a user/ account in AD that uses that alias e-mail address.

I was assuming you are on-prem. In K2 cloud, you will need to request the change by logging a ticket to K2. K2 operations may be able to make the changes for you.

Thank you so much for your response.
I did check try to change the FROM address in the environment library and the string table and even re-activated the site collection but it still did not work. I also tried to send the email by adding a different from address, which was similar to the one that I had added to the environment library.
