You can create complex editable list views for mobile.  The question will be around user experience.  Some things that look good on a full size monitor don't have the same level of usability on an iPhone.

If you use one of the newer responsive themes like Lithium blue/gray void the the style sheet will flow the UI to fit the device.  For many columns on a small format device, this usually means it will start ordering them vertically so the user has to scroll down to access columns.
