You can access workflow from management, workspace via a design(global permisions would be required in some cases)...but from what where i come from , you cannot alter a running process and expect instant update, for a workflow data to be updated it needs to be re-deployed.

Hi Tomas,

If there's a need to update a workflow variable on the go, you may do so via K2 API.

There are also tools available in Community which allows you to do the same. Please test them out first before using on a production environment:
