We're looking to have a single button on a custom Salesforce object that will run the specific document package we want instead of having to select the doc from a list. Is this possible? I tried the button wizard and I've tried looking through the documentation, but can't seem to figure this out.

Yes, it is possible using the Button Wizard, you'll want to put the Document Package Id into the Document Package Id field on the Button Wizard. If you want to auto run as well click the Auto Run check box.
