We are building a Nintex Mobile app with big lookup lists and many cascading prompts and it is causing some problems for us. Is there a way to get to the lists that are hosted offline on the mobile device? Where on the mobile device are the tables / data structures for these lists? Is there a way to make the form query these tables directly?

lookup data will be stored on the mobile form offline but there is no way to manipulate the entries.
If you want the data to not be queried offline you could use a metadata field. These are not synced offline.
