i have created infopath forms and wrttien nintex workflow also for particular sharepoint library, How to retrieve the fileds that is present at form level; but not included while publishing infopath form, but i have promoted other fields also for library, i can get for new item, existing items show blank for newly promoted field.

you have to use Query XML action for that, read the current item XML and mention your Xpath location in output . Refer to below screen for reference
