When I save a record and there is a default picklist value the default is not being written to the record. I have tried to update the field with a value and still does not write. If I create a record without skuid it works fine. The picklist is base on a global picklist value,

I just tried this using 11.1.1. It seems to be working.
Are you using record types with your object? Have you checked that you have your global pick list values included in your record type? I would also check to see if the value you entered in your condition matches what you have in your global pick list value.
