Hi! This is currently impossible in O365. This feature is reported in Uservoice and is awaiting for the next steps.
I'd recommend you export your workflow after each save so that you will keep its history of changes under control. Unfortunately no other option. The same for Nintex Forms in O365

A list of previous workflows for a given list seems not accessible, somewhat in a similar way as in on-pre ver.
Appreciate for any solutions or answers (such as "there is no ways").

Currently there is no way to get older versions of Nintex WF in O365 environment. Form versioning like in On-Premise version of Nintex forms – Customer Feedback for Nintex
