When the error comes from Nintex the error usually states to contact Nintex Support. This error does not state that so it may be coming from SharePoint.
If you create a default list with a default Nintex form do you see the same issue?

I understand that the error only occurs when using a Nintex form but the error can still originate from SharePoint.
If you create a new list and publish a defult Nintex Form do you see the same error?
Have you tried removing the Nintex Forms app and re-adding it?
