Can users view and submit the Nintex form without having any access to the Sharepoint lists?
In other words, Does Nintex form use custom or app permission to perform CRUD on the list or it uses client permission?

You would really need to have the most important form data included in the emails for task approvals, and allow Lazy Approval.
