I currently have a task that is created, there is a person or group field that accepts multiple names. When a single user is typed into the field it works correctly, however when I try to assign it to multiple people it does not send out the notification.

Is there anyway in Nintex for Office 365 to assign a task to a person or group field with multiple people?

Are you using Assign a Task? You may want to try using Start a Task Process, which is similar but allows assigning tasks to multiple users. There are options for how it handles this too.
