How do I replace my Radio Buttons to normal Buttons?

In the Design viewed below the user is prompted to chose any of the 2 choices below; Observation or Recommendation

However, when creating the design and publishing it onto Nintex Mobile Layout I am prompted to chose the Radio Buttons in which the design will look like the below

Is there a possible reason how I can replace the Radio Buttons with Normal Buttons placed alongside with each other

Unfortunately you cannot customize it for Nintex Mobile. As you noticed, not much of your custom look & feel is preserved in mobile. You cannot get much more in App Studio as well.

There is no OOTB solution for this. You could place two buttons on your form and bound them to the dedicated choice control returning the needed outcome.

Your totally correct ...
But in case of Mobile Phone Layout Publish .... then this option is not at all available

I managed to take your advice into consideration and it seems to have worked fine ...
However, the button tend to to submit the form other than saving the option for the choice control

Use the "save & continue" button instead of the "save & submit" button.
