Is it possible for Nintex to run a workflow to export a document (and its meta data) from a SharePoint Online document library, and for this to be exported into XML?

+17If the web service is available for export than yes it is possible to do this. Though I'm not really sure why you would want to export the document as XML if its not an XML document, I would look at what services are available for SharePoint Online Documents and go from there.
