I added Nintex Forms app to my site last week and it failed to install. Now when I am trying to remove it it is showing a message saying "Sorry, we couldn't remove the app. Click to Retry"
Does anyone know how I can remove Forms so I can install it again?

Adding/removing the app is controlled on the Microsoft side, you could try using powershell to remove the app. You could also try contacting Microsoft Support, as they may be able to help further with the error.
Hope you managed to resolve the issue. I came across the same issue and found the reason was a Retention Policy was applied to the site which prevented the app from being removed from the site.
Once the retention policy was disabled , I was able to remove the app without an issue.
