Yes you can use BCC field for Send an Email.

Unfortunately you cannot alter FROM fields at the moment, thus there is no trick to it.

Using Nintex for Office 365 Workflow here and BCC works pretty smoothly. Just reaffirming that.

On the send notification action configuration page I can modify the "From" field and it's working fine. I'm on SharePoint 2010 using Nintex Worklfow 2010. Same behavior in 2013. So I don"t understand.
