I want to use the BCC, FROM fields in an email action like being used in Nintex On-Premise.
Is this also possible in Nintex for Office 365 ?
If not possible, are there any other tricks possible ?

Hi Jaap,
Yes you can use BCC field for Send an Email.
Unfortunately you cannot alter FROM fields at the moment, thus there is no trick to it.

+6Using Nintex for Office 365 Workflow here and BCC works pretty smoothly. 
Just reaffirming that.
+6I got feedback from support that the FROM field - Sending email on behalf of - is on the roadmap and that they are working on this -
Maybe, let's face it, and wait to invest/develop something in code.

On the send notification action configuration page I can modify the "From" field and it's working fine. I'm on SharePoint 2010 using Nintex Worklfow 2010. Same behavior in 2013. So I don"t understand.
