My HR department hires for 7 different umbrella companies.
I am wondering if is it possible to have a formula as the letterhead when they generate a contract with Nintex that based on what company is chosen in a salesforce field, this company logo appears on the document that is generated.

You have several options that you could include elements such as pictures dynamically:
1 - Use the component library that will pull in an image based on a condition
2 - Use conditional statement
3 - Use dynamic image replacement (Have the images uploaded in a document library and create a formula field that will bring in the ID of the image based on what was selected on the record)
