Is there a way that I can configure who the workflow error messages go to? I do not want these sent to the initiator, rather to the admins.

Yep! You definitely can do this.
If you go into your Site Settings, there is (in the Nintex Workflow section) "Workflow Error Notifications".
From here you can determine who they go to - including whether or not they should go to the initiator.
