Figured I'd share this in case someone runs into it in the future.

When creating a new SharePoint Workflow in K2 Studio as seen below:

The version of SharePoint referenced by this process is Sharepoint 2010.  In order to integrate with SharePoint 2013, you need to select blank process, and then drag the appropriate wizard onto the workflow.  The wizard when creating the workflow in this manner will not be able to find SharePoint 2013 sites, or interact with lists/libraries/other elements.
