I would like to select from an Oracle Table from my Nintex Form using I assume SQL request. Is this possible and are there step by step instructions that I can follow? I would imagine that I have to set up an account using the SharePoint Secure Store Service as I have read from another post but as a newbie this is so out of my wheel house but I would like to see if possible out of the box.

The linked thread describes a workaround though that might be applicable for you.
Further than that would querying Oracle from within a Nintex Workflow be an option? According to this thread it is possible, haven't done it myself though:
