Symptoms
Copy list item is throwing the following error:

Severity: Error
Error Message: Sequence contains no matching element

Diagnoses
This was caused due to the source list does not have managed metadata column while the target does. When this column is mapped, the workflow will throw this error.
Resolution
Unmapped the managed metadata in the event and redeploy resolved the issue.
