I am fairly new to writing Nintex workflows. Is there a way to do a parallel workflow in Office 365? I am wanting two or more people to review a document at the same time. Then is there a way to only notify the person(s) who has(have) not completed the task? Any help would be appreciated.

There are more than one way to have parallel, or simultaneous tasks. You can create Parallel Branches using the Parallel action and have two task actions, one per branch. Or you could assign a task to multiple people at once, and check the box to assign individual tasks per assignee. Then depending on the behavior you selected, others would be notified if their response is no longer needed.
