I am pretty new to Nintex and I understand that there is a tight integration between Nintex Cloud and Office 365. I will like to know if Nintex cloud (forms and workflow) can integrate with a SharePoint Server 2013 found on premise. If yes, what are the type of integrations that I can look at?

It depends on what you're looking for.
Nintex Workflow Cloud is separate of Nintex for O365, just as it is separate of Nintex On-Prem.
You can trigger workflows using external starts - this tells how to trigger NWC from On-Prem or O365.

For the other way around, there's a "Call a Workflow" functionality inside of NWC - where you can set off the External Start URLs of other things:
