Is there a way to deploy new/updated workflow routing to the environment and have the workflow instances which are in progress use the new version of workflow?

Resolution

This is not an Out of the Box application. The link contains sublinks that provide the code format and important descriptive notes.
There is a sample K2 Community project that is referenced on the link above - it does contain a third party utility that you can be downloaded to do most of the legwork. This utility is not supported by K2 so I would be very sure first to read the post by WLeroux on 10-13-2015.
