For MOSS, can blackpearl's interface be used to create forms and collect data (both forms and data within a workflow), and subsequently post that data to a particular field in a list or document library?
Thoughts on this topic are much appreciated.

Yes, if you are building out a blackpearl process you can manipulate sharepoint list item data with the SharePoint List Items event wizard.
