As with everything Nintex, there's probably five ways to do this, what's the best?

I have a list with lots of items, and lots of flows running on each item.  Once the (last modified date is 5 days ago and obviously the) item hasn't been touched in 5 days, I want to use a notification action to let someone know.

If I create a flow to run when an item is modified, and have an action to wait 5 days and send a notification, this would do it, but I don't think it would "reset" the 5 day clock when an item is modified within the 5 days and the flow tries to run again.

I'm sure I'm thinking about this too hard and one of you wonderful folks will have an easy solution.

The way one usually goes about solving this issue with workflows is to create a site workflow that runs daily on a schedule.  You will essentially loop through the active items on the list, check their modified date against your requirement, and then send notification when required. 

That's the solution in a nutshell, but I'm sure you get the gist of it.
