I've just begun to learn K2, so I'm making a lot stupid mistakes. Maybe this is one of them...
I want to set a datafield in my K2 process with a K2label value from a smartform. But the value is not coming through when I look in the k2Workspace to trace the activities in my process.
Although, I'm doing the same thing as when I use a K2textbox and this is working fine.
Maybe there is yet another property to set for a K2label as when you use a k2textbox?

Unfortunately the K2 label only receives data from a process instance. Therefore you can fill the text in the label with the contents of a process variable. The reverse is not possible as the K2 label does not implement the save method required to put the label text back into the process variable.
Hence your observations are correct and the K2 SmartForm controls function as defined and consistently with what you would expect.
