Hi Andrew.  Do you have Nintex Forms in your organization?  If so, you can edit workflow task forms with Nintex Forms.

Yes, and I will use forms if this is not possible. As it was only for a few columns I thought of using standard OOB. However, one thing I noticed was that when using the task form the classic from the columns were not updatable but the responsive were. Not sure if this is something specific when using a document library.

On the Classic form for the Request Review action, the List Item Property fields are disabled by default.  It's the opposite on Responsive forms -- the List Item Property fields are enabled and can be edited in the task form.

To enable an List Item Property field on editing on a task form, open the task form in the Classic designer.  Open the configuration of the control and go to the Appearance section.  The Enabled setting is set to "No" by default, so change that setting to "Yes".  Then go to the Advanced section and change the Control Mode setting to "Edit".  Users can then update any of the List Item Property fields on the task form with these configuration changes.
