This seems like it should be so very easy, but I'm having the dandest time getting this to work.

I'm using the SharePoint Documents Event -> Update Documents' Metadata (Document) option and dragging over the fields from the SPEventsField/Items/Item/Source process xml field that match the items in the wizard to find the document to update.

Problem is, though, the metadata update doesn't work.  No errors anywhere (I've enabled Debug logging for the consoleextension) and the process moves on to the next step like nothing bad happened.  I'm updating the metadata with a hard value, so this isn't the case of a field being empty
