To assign a task to a Sharepoint 'Person or Group' column in Sharepoint 2010 for list item

During the 'Participants' wizard, select the Context Browser > Sharepoint Columns > then drag and drop the Person or Group] column of you choice

When the process runs, it will assign the task to the Person or Group column selected for that list item.

There is likely other methods of achieving this same behavior.
