Question

When presented with the option to Regenerate SmartObjects, or to Regenerate SmartObjects, Views, and Forms (on the artifacts page, after making a change to a List), Why would you only choose to regenerate SmartObjects?

Answer

When choosing to decide whether to regenerate SmartObjects or SmartObjects, Views and Forms after making a change to a List may be based on whether or not you have created custom Forms. The reason you could choose to change SmartObjects, Views and Forms is if you have a Form that is relatively simple that you may not be concerned with being changed which makes the process of changing the Form relatively easy. On the other hand for example you may have a custom Form that you have modified heavily and for this reason you will want to only update the SmartObject/s utilized by the Form. If you have a customized Form and choose to update the SmartObjects, Views and Forms this will modify everything and you will most likely lose all customization on that Form. For this reason you can change the SmartObject/s only and access the necessary Forms and modify them yourself without risk of losing any customization.
