Hi - I'm setting up a Flexi Task with Item permissions set to "Edit". Do the permissions go back to what they were after the task has been completed? We may have users with different permissions being assigned the flexi tasks, so I cannot select "when task is complete, set user permissions to "x""

If you give the assignees special permissions to the item inside the action itself it will add a single item permission for those assignees to that item.
There is no builtin option to revert that to the state before.
However if you inherit permissions until that point of your workflow you could add a "set item permissions" action right after the flexi task action and reinherit the item permissions. This will effectively restore the permissions that were present until you modified them in the flexi task.
