I was trying to create an approval workflow using Nintex Workflow, Is there any way we can set a due date for Assigned Task. Reminder is fine but It would be great if either task fails or moves to next workflow step after due date.

You can use the escalation feature(https://help.nintex.com/en-US/nwc/Content/Designer/Actions/AssignaTask.htm) to auto complete the task after a set time.
