For example I need to sign one document previous to accepted it.

 what kind of document do you want to sign? Word, PDF, InfoPath (Fat/Web), ASP.NET Web form?

Basically Word and PDF - is posible documents open office ?. I work in local entity and actually we work with office documents but do not rule out a future use open office. 

I think that one activity on my workflow is previous condition to accept one document is that it are signed by role supervisor (for example). 

The process of sign documents are programmed in webpart internally (one applet provider by partner with ability of sign one document or one forlder of documents)
