Can we customze the default email event, I need to have a check box in hte wizard 'Include Header & Footer'. If that is selected email should go with Header & footer, Header and Footer will be configured in environmental variables.

I don't know if you can, or should, customise the default events in K2, however you can create your own custom events. Have a look at the K2 Developer Help (link below). You could copy the existing Email Wizard (location below) and modify this.
