In SP Designer there are separate Edit and View forms, and you can create multiple Edit forms for submitters verses for staff who can see more fields.  In Nintex Forms, it appears to use the same form for both View and Edit modes.  Can different forms be used for View/Edit or can multiple forms be saved under different names for the same list so that different types of users can access different fields?  Thank you.

You can have on the same form diferent panels for different type of users.

You must add panels and add a rule so as to show it based on the user type

Some great documentation found here on the site may be able to support you with examples. I would start with Getting Started with Nintex Forms but find more specifically Show or hide controls with Rules in Nintex Forms

You will be able to hide fields based on the form's "Mode" (Edit, Display, New). And there are also several other conditions that can be determined in order to show or hide fields/controls. You can also hide many fields/controls at once if you first put these controls on a panel, then apply the rule to the whole panel.
