I am wondering if I can change the email address text for a workflow email? I know I can't change the address itself, but my users think the task emails are spam and they are being deleted. I would like to be able to change the text to read something more specific. Thanks!
Can the text of a workflow email be changed from the generic noreply? I don't want to change the address just the text so users do not mistake it for spam when a task email comes in. Thanks!

In the "Global Settings" page available from the Nintex Workflow Management section in Central Administration you can define Email settings, e.g. "From Adress" and "Reply To Adress".
