runs as the person who set the schedule.
So if you log in as SCA to set the schedule it should run as that user.

If I create workflow and it uses my account, down the line If I leave the company or my account is blocked/deleted/removed will the workflow still run??
yes the workflow will still run even if you leave - however I can't be sure if it will run a schedule you have set up as you..
I would create a general service account for the workflow to run under.
I believe scheduled workflows run under the OWSTimer service account, which can typically be the farm or system account. But all user initiated workflows run under the user's context.
For scheduled workflows, that makes sense. But know this is unlike FLOW in O365, where ALL service related or long living workflows should be published using a service account. It's a great feature that Nintex workflows that are created on lists and libraries do not require service accounts to publish those workflows as they will always run under the initiator context. So if you publish a workflow, then leave the company, the workflow can still run on lists and libraries.
