Is there a way to extract data from an exchange receive an email trigger email since it outputs as HTML? I need to someone extract the name, email, course name and date from this email. 
 

Business is content on using the receive date as the date the course was taken. But the rest is in the body of the message and subject line. I proposed a string in the email body and then after running tests to apply regular expression, realized that it’s coming through as HTML. Is there an easy way?

The end goal is to store the extracted data into a SPO list.
