Apologies if I've missed it in the documentation.
Is there a way to create group signers? So for example if one signature can be provided by one of three people, and it doesn't matter who, is that possible?

At this time there is not a "Group Signer" feature that would offer the ability to enter a potential pool of signers that the document would be sent to all at once for any one of the signers to execute. This could be achieved if you were able to send it to an email distribution list that the group of signers was a part of.
This would be a great feature request to be added to Nintex User Voice.
