Issue
The Query a List action, which queries a list in SharePoint Online, fails when a Person or Group column is on the list.

Resolution
Ensure that all users in the Person or Group column has an email associated with their account. If no email is present, this issue will occur.
Additional Information
This errors come from SharePoint Online rather than Nintex Workflow Cloud. Sending the same query manually outside of Nintex Workflow Cloud results in the same error.
