what considerations that will need to make for Nintex Office365 product if we are looking at deploy a New Domain for users to login and receive email on and remove the old one.

Couple if things need to look for :
1- In the Nintex workflow and form design, were the Emails hardcoded? or used variables or SharePoint group?
if its hardcoded then you would need to look inside the design and change the emails to be used either as variable or SharePoint column or group.
2- With Nintex email notification, Nintex utilise the Online Exchange, and also for Email action External emails will use an external email service to send emails (mandrill).
would suggest check if using external or internal emails in the Email actions.
